As pointed out by Monica Watrous of Food Business News, in 2018, sales of organic products reached $52.5 billion in the United States alone. That was an increase of 6.3 percent from 2017. Eggs and dairy are other areas in which organic supplies can set a bakery apart. In fact, Watrous cited eggs and dairy as a particularly fast-expanding organic market. Customers who are concerned about animal welfare may be more enticed by a bakery that uses cage-free, organic eggs to make its products. Organic dairy, meanwhile, comes from cows who are free of hormones and antibiotics, per the HuffPost, meaning it, too, can help draw animal lovers to bakeries.
