Here’s the Second Scoop!

Welcome to part two of our series on the current state of the bakery industry! If you missed part one, check it out here. Otherwise, keep reading to learn about this post’s topics: trends in ingredients and trends related to ethnic bread and perhaps add some new ingredients to your list of professional bakery supplies to order.

Increased Use of Vegetables

Lots of people are beginning to realize that a bakery’s products can make getting enough vegetables tasty and convenient. Moreover, many bakeries are catching on that there is a market for vegetable-rich bread, as highlighted in articles from Entrepreneur.com and Watson-Inc.com. In fact, the spectrum of vegetables found in bakery offerings is expanding to include atypical ingredients like tomatoes and red peppers. Keep this in mind the next time you’re ordering professional bakery supplies.

Increased Use of Ancient Grains

Ancient grains are another ingredient gaining more and more attention from consumers and bakeries. As explained on FoodBusinessNews.net, many companies and bakeries are rolling out larger numbers of offerings made from ancient grains, which include quinoa, buckwheat, farro, and others. (For a more exhaustive breakdown of ancient grains, check out this article from The Spruce Eats.)

There are many reasons consumers respond well to these grains; for instance, some of them do not contain gluten, making for an attractive gluten-free baking option. As pointed out on The Spruce Eats, just about any recipe that calls for organic bread flour could use ground-up ancient grains. This means ancient grains are a relatively easy trend for bakeries to take advantage of.

Increased Demand for Ethnic Breads

Immigrants continue to make the US a more diverse place, and food tastes reflect that. For instance, a recent analysis of American food trends published by the Canadian government has identified tortillas, pitas, and flatbreads as growing in popularity. Other bread types to keep an eye on, according to Watson-Inc.com, include Japanese milk bread, bao buns for dessert, and various Israeli breads.
